One of the most widely recognized grapes became also popular in many new plantings in Slovakia in recent decades. Variety originates in southwestern France as a product of chance crossing of Cabernet Franc and Sauvignon Blanc occured most likely in the 17th century.
Cabernet sauvignon is late ripening, it is usually chosen to be planted in warm locations, even thought it can be found in all Slovak wine producing regions - from warm ones in southern parts of Slovakia to individual northern locations in Smaal Carpathian, Nitra and eastern Slovakian regions. Wines are dark garnet colour, in nose they are in general characterised by classic cassis tones, cedar wood or even pencil sharpening, but also ranges of aromas such as green bell flavors or minty, eucalyptus notes are common as well. There is usual ability to mature in the bottle for a longer time, cherries, tobacco or ripen jam tones are developed within first few years. Wine is full bodied and opulent, with long persistence.
Quality akostné odrodové víno is produced, sometimes lighter styled kabinetné, but mainly as higher attributes such as neskorý zber (late harvest) and výber z hrozna (grapes selection), occasionally as bobuľvý výber (choice of berries) and special natural sweet wines in category of slamové víno (straw wine) occurs sporadically as well.
Cabernet Sauvignon is also quite often developed in new wooden oak barrels, which is indicated on the label as ''barikové''. Reasonable number of special cuveés with other grape varieties – usually the flagship wines of some producers is produced every year as well.
Some producers found this variety interesting to produce young and fresh rosé – which varies from quality akostné odrodové to different range of attributes from kabinetné, neskorý zber to výber z hrozna (kabinet, late harvest, grapes selection) with different final levels of residual sugar from suché and polosuché to polosladké (dry and semi dry to semi sweet).
